This is an easy, delicious recipe that is perfect for weeknights. It's one of my favourite stir frys!
Stir Fry Ingredients:
1 lb ground beef
1/2 yellow onion, diced
1 tbsp minced garlic
1 tbsp fresh grated ginger (or 1 tsp dried ground ginger)
salt and pepper to taste
1 bag coleslaw mix (14 oz)
cooked brown rice for serving (optional)
sesame seeds for garnish (optional)
Sauce Ingredients:
2 tbsp soy sauce
1 tbsp olive oil
1/2 tbsp sriracha
1/2 tbsp maple syrup or brown sugar
Directions:
Heat a large skillet over medium heat. Once hot, add the meat and begin breaking it down while it browns. Once mostly cooked through, add the onions and garlic. Continue cooking until meat is cooked through and onions are soft. Meanwhile mix all the sauce ingredients together in a small bowl.
Season the meat mixture with salt, pepper and ginger. Mix well.
Add the coleslaw mix and cook for about 2 minutes, or until the cabbage is slightly wilted.
Stir in the sauce.
Garnish with sesame seeds and serve as is, or with rice.
