If you like fudgy, chocolate-y brownies, these are for you! I have had adults and children alike enjoy these brownies without knowing that the main ingredient is black beans. These brownies seem to get better after spending time in the fridge so plan to make them ahead of time.
Ingredients:
1 1/2 cup black beans, rinsed and drained (1 15oz can)
2 tbsp cocoa powder
1/2 cup quick oats
1/4 tsp salt
1/2 cup maple syrup
1/4 cup vegetable oil
2 tsp vanilla
1/2 tsp baking power
1/2 cup chocolate chips (dairy free dark or semi-sweet if you want them to be vegan)
Directions:
Preheat the oven to 350 F. Combine all ingredients except chocolate chips into a blender (or food processor) and blend really well. Stir in the chocolate chips and then pour into a greased 8x8 pan.
Bake the brownies for approximately 18 mins. Allow to cool completely before serving (and ideally allow to sit in the fridge for a few hours too.) Cut into 9-12 brownies.
Toppings: Feel free to serve plain, or with a dollop of peanut butter, chocolate frosting, ice cream or all of the above.
