These are seriously delicious and so easy. They will be a hit for a weekend breakfast, lunch or dinner.
Who doesn't love eggs? They're one of the most affordable sources of animal protein out there, and they also contain lots of important vitamins and minerals. If you're concerned about the cholesterol in eggs, go read #5 in Kenton's blog post Top 21 Nutrition Myths.
This recipe serves two.
Ingredients:
butter for skillet
2 large handfuls of baby spinach
1 bell pepper, finely diced
1/4 yellow onion, diced
4 eggs
splash of milk
1/3 cup black beans (more or less, to taste) rinsed and drained
salt and pepper to taste
cheddar cheese, grated
salsa
2 large whole wheat flour tortillas
other toppings of choice
Directions:
With a bit of butter, saute spinach, bell pepper and yellow onions in a skillet over medium-high heat until tender.
Meanwhile, whisk eggs with a splash of milk in a separate bowl until yokes are broken and milk is combined.
Once vegetables are tender, add the eggs to the pan and scramble with the veggies.
Once eggs are almost done, stir in the black beans.
Add salt and pepper to taste once the eggs are done.
Assemble your burrito however you like using the toppings suggested (cheese, salsa, other vegetables etc)
