Healthy(er) Apple Crisp

I often serve this healthy-ish dessert when we have guests, and it is always a hit! It has all the comforting aromas and flavours of a regular apple crisp, without all the heaviness. You can make it ahead of time and just pop it in the oven when you're ready. I usually add a little extra water (maybe 2 tbsp) around the edges if I have left it in the fridge overnight or for several hours.


Ingredients:


For the Apples

  • 5 medium to large apples

  • 1 tablespoon maple syrup

  • 3 tablespoons water

  • 1 tablespoon cinnamon

For the topping:

  • 1 1/2 cup oats

  • 1/2 cup whole wheat flour (or flour of choice)

  • 1/2 cup chopped pecans, or walnuts or almonds

  • 1 tsp cinnamon

  • 1/4 tsp salt

  • 1/4 cup melted butter

  • 1/4 cup maple syrup

Instructions:


Preheat the oven to 350 F. Peel and dice the apples. Toss in a bowl with maple syrup, water and cinnamon. Pour the apples into a greased 9x13 baking dish.


In a bowl mix oats, flour, nuts, cinnamon, salt, butter and maple syrup. Spread evenly over the apples.


Bake uncovered for 20-25 mins, then cover loosely and bake for another 20-25 mins.


Serve hot with vanilla ice cream.
