I love this recipe because it's so flexible. You can make it work with whatever you have on hand. At the bottom I'll indicate my favourite ingredients to use.
Ingredients
4 cups oats
1/2 cup nuts
1/2 cup seeds
1 cup coconut (or bran flakes or more oats or nuts)
1/2 cup dried fruit (optional)
1 pinch salt
1 Tbsp cinnamon (or other favourite spice)
2 tsp vanilla
1/3 cup oil or melted butter
1/3 cup sweetener (maple syrup or honey or sugar. Presumably agave or liquid stevia would work but I have not tried these.)
If you don't have one of the dry ingredients (nuts, seeds, coconut or dried fruit) you can just replace them with more oats.
Directions:
1. Preheat oven to 350 F.
2. Mix all ingredients in a large bowl (mix well to coat dry ingredients.)
3. Spread on a cookie sheet lined with parchment paper.
4. Bake for 20-30 minutes or until golden brown, stirring every 8-10 minutes.
My Preference: Maple Pecan Cranberry Granola
Nuts: pecans (or almonds or walnuts)
Seeds: chia seeds, flax seeds, sunflower seeds (I like using a combination)
Dried Fruit: cranberries
Sweetener: maple syrup
