Make Ahead Egg Squares for Breakfast Sandwiches

These egg squares make weekday breakfasts easy! You can throw them on an English muffin with spinach and salsa, or just eat them with a piece of toast and/or fruit. You can customize the add-ins and use whatever combinations you like.


Ingredients:

1/4 cup bell pepper, diced

1-2 tbsp onion, diced

ham/bacon pieces (optional)

6 eggs

3 tbsp milk

1/4 tsp paprika

1/4 tsp celery salt

salt and freshly ground black pepper to taste


Directions:

Preheat the oven to 400 F. Spray an 8x8 pan with cooking spray. Once the oven is preheated, put the pan in the oven for 10 mins while you prepare the egg mixture.


Sauté onions, bell peppers and ham/bacon pieces until cooked through. Set aside. In a bowl, whisk together eggs, milk and seasonings. Add veggies and meat to egg mixture.


Pour egg mixture into the hot pan and return to the oven for 10-15 more minutes or until cooked through. Allow to cool and then cut into 9 squares. Store in the refrigerator.


Serving:

Use an egg square to make a breakfast sandwich however you like, or just eat it with a piece of toast and/or fruit.


Add Ins:

Feel free to experiment with the add ins. You could make them plain for your picky eaters, or add ham and cheese, sautéed veggies, etc. Go wild! And let me know what your favourite version is.
