This recipe is one of my all time favourite meatless recipes. It is so simple and satisfying, and the sauce is delicious! I mean it has peanut butter in it, so how can you go wrong?
Ingredients:
1 tbsp olive oil
½ - 1 bag mixed frozen vegetables (the oriental blend is my favourite)
1 bell pepper, finely sliced (optional)
½ yellow onion, finely sliced (optional)
A handful of frozen mango chunks, diced (I say frozen chunks because they are SO much easier to handle/dice than a whole, fresh mango)
1 can chick peas, rinsed and drained
Brown rice or rice noodles for serving
Chopped peanuts for a garnish
Sauce:
½ cup natural peanut butter
3 tbsp soy sauce
2 tbsp maple syrup
1 tbsp lime juice
1 garlic clove, minced
½-1 tbsp chili garlic sauce
1/3 cup hot water
Directions:
Mix all the sauce ingredients together and set aside.
Heat olive oil on a skillet over medium high heat.
Add the vegetables and sauté until tender.
Add the chick peas.
Add the sauce and mix well until heated through.
Serve over brown rice or rice noodles and garnish with chopped peanuts.
